Well Hello Readers!

I have been very lax about keeping up my blog.  Well, to be honest, I was just not feeling up to my normal self.  Now sure what was going on, but just did not have the energy I needed.  I am sure it started with my RA, and then I added to that by eating something I should not have eaten.  I was also trying to cut back on fruit, since I eat a LOT of fruit, but I have added a little fruit back in, hoping that helps!

I have lots to say today.  We had a wonderful weekend.

It started on my morning jog with Mr. G.  Part of our jog took us by this very nice little lake where we saw the geese out with their babies for their morning swim and walk.  

Then, for lunch, we met some very good friends, at one of my favorite burger places in Atlanta.  If you live in the Atlanta area, and have not been to Grind House, you really need to try it.  The burgers are great, the atmosphere is awesome, and if you are into shakes, (which I do not drink because of all the dairy and sugar) but they have awesome shakes.  And Bonus, there was this very pretty cactus in front of the restaurant.

Yesterday, Monday, I had a burst of energy and in between my work, (at this time, I own a small business) and getting errands done, I made a pan of protein Streusel Coffee Cake.    Several of you had asked for this recipe so I am posting this recipe today:

HighProtein Gluten Free Streusel Coffee Cake

For the Streusel Topping:

1/3 c. gluten free bisquick

1/2 c. packed brown sugar

3/4 t. cinnamon

1/4 c. firm butter

For the Coffee Cake:

1 3/4 c. Gluten Free Bisquick  (To this, I add one scoop of Whey Protein Powder and 1 scoop of collagen)

3 T. sugar

2/3 c. milk  or water

1 1/2 t .vanilla

3 eggs  (I use 2 eggs and 2 egg whites for more protein)

In a small bowl mix 1/3 c. Gluten Free Bisquick, the brown sugar, then cut in the butter.  This will be crumbly, this is for the topping, set this aside.

In another bowl stir all coffee cake ingredients until blended.  Spread in the prepared 9 in pan.  Sprinkle the topping over the top.

Bake 25-30 minutes or until golden brown.  Store this in a tightly covered container.

This make a great breakfast, or snack.

Then, for dinner I made ribs,  Amazingly, I baked this just perfect.  This will give me some good protein for a day or two.

I also made my favorite salad with greens, carrots, mushrooms, baby shrimp, onion and just a little salt and pepper.  Turned out to be a very good dinner.

Today started out good as well. I managed to get our jog in between rain drops, how that happened, I don’t know because I never get that lucky. ¬†Then, I did my workout, I am on phase 2, week 2 of my 12 week program. ¬†I really like this program.

I have to go to the mall again today, looking for a dress again.  Man, I suck at shopping.  My hubby told me not to come home with old lady clothes.  What the F does that mean?   Any readers who have ideas or thought or suggestions, please let me know.  In other words HELP!!!

Well kiddos!  That is all I have for now, need to get to work so I can get other things done.
